On day 2, our goal was to layout the labyrinth design on the grass-free and fertilized land and to dig the 1 foot trenches where our “Tuscan Blue” rosemary will be planted. This is probably the most labor intensive as all so far of the dirt dug out then needs to be transported out via wheelbarrow to the truck- (we still have a bit of this to finish up with this step on Monday, March 23). We start our day at 8:30am- take a 30-min. lunch break- and finish up at around 2:30p with clean-up etc with time for the students to change their clothes and re-emerge into the urban landscape!
